Dr. Jorge Carlos Ruiz Ruiz is a Research Professor at the School of Nutrition, Division of Health Sciences, Anahuac Mayab University. He received a Master's degree in Food Science and Technology from the Faculty of Chemical Engineering, UADY and a Ph.D. in Food Sciences (Honorable Mention) from the National School of Biological Sciences, IPN. He acts as a reviewer and editor of scientific journals in the area of ​​food sciences. He is member of the Institute of Food Technologists of the United States, the Mexican Association of Food Science, and the Mexican Society of Biotechnology and Bioengineering. He has 16 years of teaching experience at the undergraduate and graduate levels. He has been a Member of the National System of Researchers in Mexico (Level 2) since 2013. He was Winner of the National Award in Food Science and Technology in 2014 and Alsea Foundation International Award 2022. His research interests include sustainability and food innovation, food quality and safety, and functional foods and ingredients.
