Prof. Dr. Yi Chen is a professor at the State Key Laboratory of Food Science and Technology at Nanchang University. She holds a doctorate in Food Science from the State Key Laboratory of Food Science and Technology at Nanchang University. She stayed in the Department of Analytical Chemistry and Food Chemistry, University of Vienna, Austria, for a while conducting research. Her basic lectures are on Food Chemistry, Food Quality Control, Food Materials, Nutritional Sciences, and Food Quality. Her research interests include food quality/authenticity; contaminants in food (including natural and process-produced toxic compounds); analytical methods; NMR; metabolite profiling; chemometrics; and nutritional properties.
