Katiuchia Pereira Takeuchi holds a master's and Ph.D. in food engineering. Dr. Takeuchi's research is dedicated to the comprehensive evaluation of the physical and chemical properties of raw materials and food products, with a primary goal of ensuring food safety. Her expertise includes the analysis of plant-based foods, focusing on the quantification of chemical and bioactive compounds, particularly from the Amazon Forest biome. She is also involved in the development of innovative food products and the optimization of processing technologies. Since 2006, she has been a professor, and since 2013, she
has worked at Universidade Federal de Mato Grosso. Dr. Takeuchi's key areas of interest encompass Food Science and Technology, Food Engineering, and Process Engineering. Her work significantly contributes to the agriculture, livestock, and food agro-industries, as well as scientific research.
