Dr. Carmen Soto-Maldonado is a researcher at the Centro Regional de Estudios en Alimentos Saludables -CREAS. She completed her PhD studies in Engineering at the Pontificia Universidad Católica de Valparaíso. She recently led the projects FONDEF (ANID) ID22i10292 and Fortalecimiento Regional R23F0004. She has published more than 40 papers in various journals. Her disciplines include Food Biotechnology, Food sciences, Agro-waste revalorization, and enzymatic and fermentation processes, among others.
Dr Araceli Olivares-Miralles received her PhD doctorate in Biochemical Engineering at the Pontificia Universidad Católica de Valparaíso in 2011 and has been a researcher at the Centro Regional de Estudios en Alimentos Saludables-CREAS since 2011. She has led several government, business and entrepreneurial projects and published over 15 papers in scientific journals. Her disciplines include Food Biotechnology, Food sciences, Fermentation and enzymatic processes, and microencapsulation techniques.
Franco Cárdenas Fehrenberg is researcher at the Centro Regional de Estudios en Alimentos Saludables (CREAS) from Valparaíso, Chile. He is Biochemist from the Universidad Austral de Chile and completed his PhD studies in Biotechnology at the Universidad Técnica Federico Santa María/Pontificia Universidad Católica de Valparaíso. He has published papers in disciplines such as environmental microbiology, bioremediation, and biotransformation.
