Samson A. Oyeyinka is a Senior Lecturer at the National Centre for Food Manufacturing, College of Health and Science. He joined the University of Lincoln in April 2022 following roles at Fox's Biscuit, UK, Quadram Institute Bioscience, UK, and the University of Johannesburg, South Africa. Previously, he taught at Ladoke Akintola University, Nigeria (2010–2011), the University of Ilorin, Nigeria (2011–2020), and Bicol University in the Philippines (2021–2022). Currently, he serves as an Editorial Board Member for Legume Science, the Korean Journal of Food Science and Preservation, and the Journal of Food Processing and Preservation. Oyeyinka is actively engaged with professional organizations including the Institute of Food Technologists (IFT), the Institute of Food Science and Technology (IFST), the Nigerian Institute of Food Science and Technology (NIFST), and the South African Association of Food Technology (SAAFoST). His accomplishments include international recognition as a Global Talent in the Exceptional Promise category by the Royal Society of the United Kingdom (May 2021). He held a position as an Honorary Visiting Research Fellow at the University of Surrey, UK (November 2021–November 2022) and currently serves as a Senior Research Fellow at the University of Johannesburg (2023-2025).
