Mirian T. K. Kubo is an assistant professor at Université de Technologie de Compiègne
(UTC), and currently, she is responsible for the UTC engineer specialty
“Innovation in food and agro-resources”, department of Biological Engineering.
She is a member of Enzyme and Cell Engineering Unit UMR 7025 CNRS (GEC), in
particular being part of the food science research team. She holds a PhD in
Process and Bioprocess Engineering from ONIRIS (France) and a BSc in Food Engineering
from the State University of Campinas (UNICAMP - Brazil). She has expertise in food engineering and
technology, with emphasis on food development, food processing, encapsulation
of bioactive compounds, food packaging, and physical and functional food
properties.
