Author Biographies

Dr. Lisete Sousa Paiva works in the Food Sciences and Food Technology Laboratory of the Department of Physics, Chemistry and Engineering as a faculty member of Science and Technology at the University of the Azores. She has a PhD in Biology from the University of the Azores and is an integral member of the Institute of Agricultural and Environmental Research and Technology at the University of the Azores. From 2018 to 2022, she was a principal researcher at Plantações de Chá Gorreana as part of the TeaHealth project (ACORES-01-0247-FEDER-000014). She has been a junior researcher at University of the Azores since 2022 (doi.org/10.54499/CEECINST/00024/2021/CP2780/CT0001). Her areas of interest are within the chemistry of natural products, namely determination of secondary metabolites' bioactivities from macroalgae, plants and other functional foods consumed in the Azores islands, with a particular focus on therapeutical potential for human health.

Prof. José Baptista is a honorary member and invited associate professor of the Department of Physics, Chemistry and Engineering Sciences and is on the faculty for Sciences and Technology at the University of the Azores. He is a member of the Institute of Agricultural and Environmental Research and Technology at the University of the Azores. He carries out research in the field of natural products, chemistry of food science and technology, particularly in the extraction, separation and determination of the bioactivity of secondary metabolites from plants and marine organisms in the Azores. He has experience in the determination of antioxidants, antitumor research, angiotensin I converting enzyme inhibitory activities, and in phenolic and flavonoid compounds research using high pressure liquid chromatography (HPLC) and gas chromatography. He also has experience in the structural elucidation of isolated compounds and in determining the composition of functional foods and nutraceuticals (proteins, lipids, carbohydrate contents, fatty acid profiles for SFAs, MUFAs and PUFAs, and determination of amino acids, vitamins, fiber and minerals) that impact various pathologies. He has particular emphasis on the investigation of cellular biomarkers with implications for cardiovascular diseases.
