Dr. Jesús Guadalupe Pérez-Flores holds a Master's degree in Food Sciences and graduated from the Institute of Agricultural Sciences of the Autonomous University of the State of Hidalgo. In 2011, he graduated with a Bachelor's degree in Food Chemistry, specializing in Shelf Life Estimation and Food Physiochemistry, from the Institute of Agricultural Sciences of the Autonomous University of the State of Hidalgo. In 2015, he completed his Master's degree in Food Sciences, specializing in the Physiochemistry of Biopolymers and Food Physiochemistry. Currently, he is working at the Chemical Research Center, Autonomous University of Hidalgo (UAEH). His research interests focus on the following: extracting and characterizing high-value-added polysaccharides recovered from agro-industrial processes by-products and evaluating their food, cosmetic, and biomedical applications; and food shelf life and stability testing, applying artificial intelligence models as a tool to predict changes in food quality attributes.
