Prof. Dr. Concetta Condurso is an Associate Professor in Food Science and Technology in the Department of Veterinary Science of the University of Messina. Prof. Dr. Concetta Condurso earned a degree in chemistry (110/110 with honors) from the University of Messina in 1999, a Ph.D. in Chemical Sciences from the University of Messina in 2004, and a Ph.D. in Food Chemistry and Safety from the University of Messina in 2015. Dr. Concetta Condurso received a National Teaching Qualification for secondary schools in Chemistry and Chemical Technology in 2009, a National Scientific Qualification for the role of Associate Professor of Food Science and Technology in 2017, and a National Scientific Qualification for the role of Full Professor of Food Science and Technology in 2018. Prof. Dr. Concetta Condurso has authored more than one hundred scientific papers (65 in Scopus Database) on food science and technology published in international scientific journals or in proceedings of national and international conferences. Prof. Dr. Concetta Condurso’s research interests mainly include the design and development of functional foods using sustainable ingredients, shelf-life definition, minimally processed and fresh-cut fruits and vegetables, volatile profile and sensory qualities of food products, and migration of NIAS (non-intentionally added substances) from plastic packaging materials into foods and beverages during the shelf life.
Dr. Fabrizio Cincotta is a Fixed-Term Researcher for the scientific disciplinary sector AGR/15 "Food Sciences and Technologies" in the Department of Veterinary Sciences of the University of Messina. He earned, from the University of Messina, a bachelor’s degree in Biological Sciences in 2012, a master's degree in Biology (Biology of Nutrition) in 2014, and a PhD in Applied Biology and Experimental Medicine in 2017. In 2020 he was a Visiting Researcher at the Teagasc Food Research Center in Ireland. In 2021 he obtained the National Scientific Qualification for the role of Associated Professor and in 2023, he obtained the National Scientific Qualification for the role of Full Professor for the AGR/15 sector. He also served as a member of the Doctoral College in Veterinary Sciences, the Council of the Department of Veterinary Sciences, and the Council of the Degree Course in "Sciences, Technologies, and Safety of Animal Production" and "Biology of Health of Applied Technologies and Nutrition". His research interests mainly include analytical methods, wines, viticulture, flavonoids, anthocyanin, HS-SPME-GC-MS, and volatile compounds.
Dr. Luca Nalbone is currently a Senior Researcher in the Department of Veterinary Sciences of the University of Messina (disciplinary scientific sector: inspection of food of animal origin), and a specialist in "Inspection of Food of Animal Origin" at the School of Specialization in Inspection of Food of Animal Origin, Department of Veterinary Sciences, University of Messina. Dr. Luca Nalbone received a master's degree in Veterinary Medicine and a Qualification to exercise the veterinarian profession from the Department of Veterinary Sciences of the University of Messina in 2016. Dr. Luca Nalbone earned a PhD in Veterinary Sciences from the Inspection Section of Food of Animal Origin, Department of Veterinary Sciences, University of Messina, in 2020. Dr. Luca Nalbone was a reviewer for several indexed international scientific journals in the Food Science category and presented at several national and international scientific conferences on topics related to the safety of foods of animal origin. Dr. Luca Nalbone’s research interests mainly include food sustainability, food microbiology, essential oils, and food of animal origin.
Prof. Graziella Ziino is currently a full professor for the Scientific Disciplinary Sector VET/04 "Inspection of Food of Animal Origin" at the Department of Veterinary Sciences, University of Messina. Prof. Graziella Ziino received a degree in Veterinary Medicine "summa cum laude" from the University of Messina in 1996, and a Ph.D. in Inspection of Food of Animal Origin from the University of Naples in 2000. From 31/03/2011 to 01/12/2019, Prof. Graziella Ziino worked as an Associate Professor of the Inspection of Food of Animal Origin at the University of Messina. Prof. Graziella Ziino also served as a member of the working group for the quality assurance of the master’s degree course in Safety and Quality of Animal Production, and a member of RiConnexia Srls, a spin-off of the University of Messina on food safety. Prof. Graziella Ziino’s research interests mainly include food inspection, food microbiology, and food hygiene.
