Maja Molnar is a Full Professor at the Faculty of Food Technology Osijek, Josip Juraj Strossmayer University of Osijek, Osijek, Croatia. She started working at the Faculty of Food Technology Osijek in 2007, and in 2023, she was promoted to Full Professor. She completed her Ph.D. studies in biotechnical sciences at the Josip Juraj Strossmayer University of Osijek in 2011, dealing with the synthesis of heterocyclic compounds with potential biological activity. Her research interests include the synthesis of heterocyclic compounds, green chemistry, coumarins, and quinazolinones.
Martina Jakovljević Kovač is currently an Assistant at the Faculty of Food Technology, Josip Juraj Strossmayer University of Osijek, Osijek, Croatia. She received a master’s degree in food science and nutrition from Josip Juraj Strossmayer University of Osijek in 2016. She has been a postgraduate student in chemistry of the Mediterranean environment at the Faculty of Chemistry and Technology
since 2018. Her research interests include extraction, deep eutectic solvents, antioxidant activity, medicinal plants, HPLC, polyphenols, and bioactive components.
Valentina Pavić is currently an Associate Professor at the Department of Biology, Josip Juraj Strossmayer University of Osijek, Osijek, Croatia. She completed her Ph.D. studies in molecular biosciences at the Josip Juraj Strossmayer University in 2013. Then, she served as an Assistant Professor for scientific research work there. Her research interests focus on developing new antimicrobial agents from various sources to combat microbial resistance. She works with heterocyclic compounds, which exhibit a wide range of biological activities, and investigates the effects of different plant extracts on human pathogens. Additionally, she focuses on plant lipid metabolism, plant antioxidant compounds, and lipoxygenase inhibition. She is a member of the Croatian Society for Neuroscience, the Croatian Society for Biochemistry and Molecular Biology, and the Croatian Chemical Society.
