Prof. Dr. Juan C. Mauricio currently works as a Full
Professor in the Department of Microbiology at Universidad de Córdoba (Cordoba,
Spain). Prof. Dr. Mauricio graduated from University of Córdoba with a Ph.D. in
Microbiologia. His research interests mainly focus on ethanol production, Saccharomyces
cerevisiae, wine, yeasts, biotechnology, fermentation, yeast fermentation, fermentation
biotechnology, microbial biotechnology, and applied microbiology. He is a reviewer
for the following journals: Journal of Agricultural and Food Chemistry, Journal of
Biotechnology, Journal of Proteome Research.
Inés M. Santos-Dueñas has been working as a Full Professor
at Universidad de Córdoba (Cordoba, Spain) since 2019. From 2016 to 2019, Santos-Dueñas
was a Contracted Professor in the area of Chemical Engineering, Department of
Inorganic Chemistry and Chemical Engineering, and was an Assistant Professor from
2011 to 2016. Santos-Dueñas graduated from University of Córdoba with a Doctor
in Chemistry (Inorganic Chemistry and Chemical Engineering) in 2009. Santos-Dueñas’s
research interests mainly focus on bioreactor systems, acetification, vinegar, and
modelling.
Dr. Isidoro García-García is a Full Professor of Chemical Engineering at the University of Córdoba, Spain. His research interests include biochemical engineering, specifically analyzing and optimizing biochemical reactors and acetic acid bacteria. He is a member of 38 research projects and contracts with companies, of which 21 he was the principal investigator, and 25 were granted in competitive public calls. He has published approximately 85 publications and a similar number of congress communications at an international level (two of them awarded, one in Japan and the other in Italy). They coordinated a research network on vinegar and acetic acid bacteria, including groups from Spain, Italy, Switzerland, and Belgium and companies from Spain, Italy, and Germany. Dr. García-García has had the responsibility of organizing two international conferences. From 2012 to 2021, he was the principal investigator of the Andalusian research group RNM 271 (Chemical Engineering) of the University of Cordoba (UCO). His contributions to the modeling and optimization of biochemical processes (particularly with acetic acid bacteria) have been highlighted, with direct applications in some industrial vinegar plants. He is also developing new fermented products and optimal use of natural resources. Dr. García-García has coordinated seven departments for the PhD program at UCO, and from 2017 to 2020, he was the Director of the UCO Department of Inorganic Chemistry and Chemical Engineering.
