Dr. Nan Shang is an Associate Professor at China Agricultural University. She is mainly engaged in the research of agricultural products' storage and processing, the high value-added utilization of agricultural products and their by-products, the development of new agricultural products' storage and preservation technology, etc. She received her Master's degree and Bachelor's degrees from China Agricultural University (CAU). She received her Ph.D. degree from the University of Alberta, Canada, focusing on the development and utilization of active proteins and active peptides in agricultural and livestock products and their by-products, during which she worked part-time as a member of the College’s Graduate Program Committee and as a Teaching Assistant and was awarded the honorary titles of Alberta Innovates Future Technology, FGTC Legacy, etc. She has participated in many international academic conferences, such as IFT and AOCS, and has received honors and awards related to the conferences.

Pinglan Li is a Professor at the School of Food Science and Nutritional Engineering at China Agricultural University. She received her Bachelor's degree at Shanxi Agricultural University in 1986 and her Master’s degree at Nanjing Agricultural University in 1997. She completed her PhD studies at China Agricultural University in 2004. Her main research interests include High-throughput directional selection technology and the physiological function evaluation of probiotics; the Structure and function of the active metabolites of probiotics; the Establishment of a high-density culture system for probiotics and the development of a high-efficiency fermentation agent and live bacterial preparation; Research on the regulation of probiotic toxin-producing genes related to foodborne pathogenic bacteria; and Risk assessment and the rapid measurement of foodborne spoilage bacteria and pathogenic bacteria.
