Prof. Dr. Dequan Zhang graduated from the Chinese Academy of Agricultural Sciences, where he received the Top Ten Young Scientist Award. He also was awarded the Young Scientist Award by the Journal of Scientific Chinese in 2012. He is the Director of the Science and Technology Administration Department, Institute of Agro-Products Processing Science and Technology, CAAS, the leader of the Meat Processing Innovation Team, the Deputy Director of the Comprehensive Key Laboratory of Agro-Products Processing, MOA, and the Director of the Meat Processing Research Group, National Modern Sheep Industry Technology System. He has been engaged in meat science and technology research for a long time, and his study is mainly focused on three aspects: losses decreasing post mortem, industrialization of traditional Chinese meat products, and high-value use of bone and blood. He chairs more than 20 projects with funding from National Program-Agro-Scientific Research in the Public Interest, the National Modern Sheep Industry Technology System, the National Natural Science Foundation of China and collaborations with companies.
