Author Biographies

Dr. Ewa Pejcz is an Assistant Professor at the Wroclaw University of Economics and Business. She obtained her Master's degree at the Wroclaw University of Economics and Business in 2011 and her Ph.D. degree at the Wroclaw University of Environmental and Life Sciences in 2016. She served as an Assistant Professor at the Uniwersytet Przyrodniczy we Wrocławiu from 2016 to 2023. Her research interests include Antioxidant Activity, Food Science and Technology, Food Quality, Food Processing, Food Processing and Engineering, Nutrition, Biochemistry, Food Analysis, Food Chemistry, and Food and Nutrition.
