Christina Lengyel received her BSc in Home Economics fromthe University of Alberta, Canada, and a PhD in Nutrition from the University of Saskatchewan, Canada. She is a Professor at the Faculty of Agricultural and Food Sciences, University of Manitoba. Her research interests mainly focus on nutrition and health-related issues of baby boomers and older adults residing in residential care [e.g., long-term care (LTC) homes] and in community residences, in both rural and urban areas, to improve their nutritional well-being and quality of life, specifically: (1) determinants of food and fluid intake; (2) dietary assessment; (3) body image and baby boomer women; (4) nutrition end of life practices in LTC.
Dr. Abigail Wickson-Griffiths is an Associate Professor at the Faculty of Nursing, University of Regina. She holds a Bachelor’s degree in Nursing from McMaster University, a Master’s degree in Nursing from Ryerson University, and a Ph.D. in Nursing from McMaster University. Her fellowship work evaluated the
Palliative Performance Scale used in the long-term care home setting. Her primary research interests are palliative care and end-of-life issues in long-term care, quality-of-life issues in long-term care, dementia care, and advanced practice nursing.
