Ruth Elizabeth Belmares-Cerda is the Head of the Food Development and Technology area at the Faculty of Chemical Sciences of the Autonomous University of Coahuila (UAdeC). Her scientific and research work is focused on the development and innovation of functional foods from agro-industrial waste, bioactive molecules and the use of little explored resources to solve problems of obesity, malnutrition and diabetes. She is a Research Professor of the Functional Foods and Nutrition Group (FF&N). She completed professional training as a Chemist Pharmacobiologist (2001, UAdeC), and then obtained a Master's in Food Science and Technology (2005, UAdeC) and a Doctorate in Biotechnology (2008, UAdeC). Her experience includes international stays at the Institut de Recherche pour le Développement-IRD (2004, Marseille, France) and at the Institut National de la Recherche Agronomique-INRA (2008, Rennes, France). She won first place at the Coahuila Science and Engineering Fair 2018. She is currently a member of the Mexican Association of Food Science. She is involved in linkage projects with the productive sector for the generation of new products through the National Peasant Commission and with the Mexican Union of Nopal, Tuna and Maguey Producers in Coahuila.
Mónica is a research professor at the School of Chemical Sciences of the Universidad Autónoma de Coahuila. She is a pharmacobiological chemist; her Master's and doctoral program were in Food Science and Technology. She is the General Coordinator and founder of the Bioprocessing Mx-LATAM Network, whose objective is to promote R&D in the area of bioprocessing through interaction between universities, institutes, research centers and relevant industries in Mexico and Latin America.She has been awarded the Latin American Women in Chemistry Awards in the category of "Emerging Leader", granted by the American Chemical Society and the Latin American Federation of Chemical Associations (FLAQ). Monica's expertise is in the areas of fermentation processes, microbial biotransformation, enzyme production, industrial food waste valorization, the extraction of bioactive compounds (antioxidants) and chemical characterization.
Dr. Rosa María Rodríguez-Jasso has been a Full Professor in the School of Chemistry, and the Founder and Leader of the Biorefinery Group at the Autonomous University of Coahuila since 2014. In 2014, she became a member of the National System of Researchers, assigned with level 1, granted by the Mexican National Council of Science and Technology (CONACYT). Since 2015, she has been the coordinator of the Food Research Department, and in 2017, she became the Secretary of Planning of the School of Chemistry. Currently, she is the President of the Mexican Association of Food Science (AMECA) for the period 2021-2023. She has a B.Sc. in Chemical Engineering (2002) and an M.Sc. in Food Science and Technology (2006) from the Autonomous University of Coahuila (Mexico), from where she graduated with honors in her thesis dissertation. In 2012, she finished her PhD in Chemical and Biological Engineering at the University of Minho, Portugal. Her research is based on the valorization of aquatic biomass and marine residues, specifically seaweed and microalgae, under the concept of a biorefinery, applying a range of key green technologies for the production and characterization of high-value-added compounds and functional ingredients (polysaccharides, oligosaccharides, antioxidants, and prebiotics) and study applications for the food and nutraceutical industries.
Sonia Lozano-Sepulveda has been a Professor in Biochemistry and Molecular Medicine at the Autonomous University of Nuevo León since 2017. She undertook a PhD in Biochemistry and Molecular Medicine from the School of Medicine, UANL, from 2012 to 2016. Her research interests include molecular virology; pathogenesis by RNA viruses; and molecular hepatology. Dr. Lozano has been awarded the UANL Research Award on two occasions in the Health Sciences category. Dr. Lozano is a member of the Department of Biochemistry and Molecular Medicine, of the Faculty of Medicine. She is a professor of the Biochemistry Laboratory in the career of Midwifery Surgeon. She is a Professor in the Master's program in Molecular Biology and Genetic Engineering. She is also the Biosafety coordinator of the Biochemistry department.

Dr. Araceli Loredo-Treviño is a Teaching Researcher at the Department of Food Research, Autonomous University of Coahuila-Saltillo Unit. She received a Doctorate degree in Biotechnology from the Universidad Autónoma de Coahuila. She currently works in the field of food science and technology, developing food products and evaluating their functional properties. She applies microbiology techniques to enhance these effects.
