Dr. Iva Čanak is a postdoctoral researcher at the Faculty of Food Technology and Biotechnology, University of Zagreb, Croatia. She earned an MS in Bioprocess Engineering and a PhD in Biotechnology from the University of Zagreb. Her research interests include lactic acid bacteria, aquaculture, biopreservation, and biological methods of mycotoxin removal.
Dr. Deni Kostelac is a postdoctoral research associate at the Faculty of Food Technology and Biotechnology, University of Zagreb, Croatia. He graduated with a degree in Molecular Biotechnology and obtained a doctorate in probiotics from the University of Zagreb. His research interests include probiotics, lactic acid bacteria, bacteriology, fermentation, inflammation, oxidative stress, equid milk, whey, and microbiology.

Prof. Dr. Ksenija Markov is an associated professor at the Faculty of Food Technology and Biotechnology, University of Zagreb, where she got her BSc, MSc, and PhD in 1987, 1991, and 2005. Her research interests include microbial indicators in food quality control, Microbiology, Fungi, Mycotoxins, Ochratoxins, Bacteriocins, and Mycology.
Prof. Dr. Jadranka Frece is an associated professor at the Faculty of Food Technology and Biotechnology, University of Zagreb, where she got her BSc, MSc, and PhD in 1997, 2003, and 2007. Her research interests include Probiotics, Lactic Acid Bacteria, Food Microbiology, Prebiotics, Food Microbiology and Safety, Dairy Microbiology, Food Biotechnology, Fungi, Food Quality, and Meat Science.
