Dr Taiwo O. Akanbi is a Lecturer in the Department of Food Science and Human Nutrition, University of Newcastle, Australia. He holds a Bachelor of Science (BSc) degree in Food Science and Technology; a Master of Science (MSc) degree in Food Biotechnology, and a Ph.D. in Food Chemistry and Biotechnology. His research interests include food bioprocessing, encapsulation for nutrient delivery, and food waste valorisation.
