Dr. Yun-Sang Choi is a Research Associate at the Korea Food Research Institute. He received his Ph.D. from Konkuk University in 2009. He served as a Researcher at the Konkuk University from January 2009 to August 2011 and as a Patent Examiner at the Korean Intellectual Property Office from September 2011 to April 2014. He joined the Korea Food Research Institute in May 2014. His Research Areas include Food Processing, Meat Science, Edible Insects, Protein Extraction, and Meat Processing. He received a Minister of Agriculture, Food and Rural Affairs Award and a National Science and Technology Research Council Chairman’s Award (Technological Innovation) in 2019 and a Korea Livestock and Food Society Academic Award in 2021.
