Minjie Gao is a Professor at the School of Biotechnology, Jiangnan University. He earned his Bachelor’s Degree in Biological Engineering, his Master’s Degree in Biochemical Engineering, and his Ph.D. in Fermentation Engineering from Jiangnan University in 2003, 2007, and 2012, respectively, and was a Post-doc in Food Science and Engineering at the same university (2014–2017). He served as a Visiting Scholar at Ohio State University (2018–2019) and an Associate Professor at Jiangnan University (2012–2022). He is mainly engaged in green biomanufacturing and reactor technology for functional sugars.
Xiaobei Zhan is a Professor at the School of Biotechnology, Jiangnan University, and is the Discipline Leader of the Key Laboratory of Carbohydrate Chemistry and Biotechnology (Jiangnan University), Ministry of Education. He is also a member of the American Society of Agricultural and Biological Engineers. He holds a Ph.D. in Agricultural and Biological Engineering from Kansas State University. He has been engaged in research of the theory and production application of microbial polysaccharides and functional oligosaccharides for a long time, and has research interests in high-viscosity fermentation technology, microbial polysaccharide biosynthesis, the preparation of functional oligosaccharides, bioreactors, and traditional fermented foods.
