Prof. Dr. Lucia Leite-Lais is an Associate Professor in the Department of Nutrition at the Federal University of Rio Grande do Norte, Brazil. She holds a degree in Nutrition, specializing in Clinical Nutrition and Clinical Research. She completed a Ph.D. in Health Sciences and a Post-Doctorate in Nutritional Genomics. Prof. Dr. Leite-Lais teaches Clinical Nutrition at the undergraduate and graduate levels. She actively contributes as a Researcher at the Laboratory of Technological Innovation in Health (LAIS). Her expertise encompasses nutritional assessment, gastrointestinal tract diseases, neurodegenerative diseases, enteral nutrition, and nutrition care process.
Prof. Dr. Bruna Leal Lima Maciel is a nutritionist, with a PhD in Biochemistry (2013) and a master's degree in Health Sciences (2008), from the Federal University of Rio Grande do Norte (UFRN). She has worked as a professor in the Nutrition department at UFRN since 2010 and is a permanent member of the Postgraduate Program in Nutrition-UFRN (2016) and the Postgraduate Program in Health Sciences (2020). She is a member of the American Society for Nutrition (2021). She teaches subjects related to dietetics and research applied to nutrition, coordinating extension projects that translate the application of dietetics to health, and focusing on the development of culinary skills. In research, she has experience in coordinating and collaborating in local, national, and international multicenter projects on the following topics: child nutrition and infections; nutrition and obesity; bioactive substances in foods and obesity.
Prof. Dr. Ana Heloneida de Araújo Morais has a degree in Nutrition (2000), a master's degree in Biochemistry (chemistry and protein function) from the Federal University of Rio Grande do Norte (2002), and a PhD in Biological Sciences - Molecular Biology (nutrigenomics) from the University of Brasília (2007). She is an Associate Professor III of the Department of Nutrition (DNUT) at UFRN. In 2018/2019, she was a visiting researcher/postdoctoral intern at the International Iberian Nanotechnology Laboratory. She has already served as deputy coordinator of the Nutrition course/UFRN (2011) and as deputy head and head of DNUT/UFRN (2015-2018). She is currently vice-coordinator of the Postgraduate Program in Nutrition at UFRN. She has experience in the areas of Nutrition, Food and as a professor-researcher, she works in the areas of Nutrition and General Biology applied to Health. In research, with an emphasis on Biochemistry, Molecular Biology, and Nanotechnology, she works mainly on the following topics: chemistry and protein function; in vitro and in vivo digestibility; safety and bioactivities in cell culture and experimental model of diet-induced obesity. In addition, she is renowned in the field of research and has served as a Permanent member of the Postgraduate programs in Biochemistry (Masters and Doctorate) and Nutrition (Masters) at UFRN.
