Professor Dr Naomi Osakabe is a Professor of the Department of Life Sciences at the Faculty of Systems Science and Engineering, Shibaura Institute of Technology. She is a director of the Japanese Polyphenol Society, a councilor of the Japanese Oxidative Stress Society, a councilor of the Japanese Society of Food Immunology and a consultant of the Japanese Society of Nutrition and Food Science. Her specialty is food functionality, and in particular, she has studied the functionality of polyphenols for many years.

Professor Dr Vittorio Calabrese, MD, is the Director of the School of Specialization in Clinical Pathology and Clinical Biochemistry at the University of Catania and the University of Messina. He received a Degree in Medicine in 1984 at the University of Catania and specialized in Neurology. His research focuses on the role of free radicals and antioxidants in human disease, particularly Alzheimer's disease and other brain disorders.
