Author Biographies

Kevin Linehan received his bachelor's degree in Neuroscience in 2018 and a Ph.D. in Microbiology in 2023 from the University College Cork. He is currently a Technologist at Teagasc Food Research Centre. His research interests mainly focus on exploring early life microbiome and virome transfer to develop novel therapeutics (probiotics, bacteriophage) to combat the growing global threat of antimicrobial resistance. His research also explores the use of Lactic Acid Bacteria as probiotics & silage innoculants for enteric methane inhibition in ruminants.
Dhrati V. Patangia received her M-tech integrated in Biotechnology at the D. Y. Patil University, India in 2017, and a Ph.D. in Microbiology from the University College Cork in 2023. She then worked as a Research Assistant at APC Microbiome Ireland and is currently a Postdoctoral Researcher at Teagasc Food Research Centre. Her research interests mainly focus on microbiology; microbiota; and gut.
R. Paul Ross received his B.Sc. in Biochemistry and Microbiology and a Ph.D. in Microbiology from University College Cork. He finished his postdoctoral study at Wake Forest University, NC. In 2014, he became the Head of the College of Science Engineering & Food Science at UCC and in 2016 also took up the position of Deputy Head of APC Microbiome Ireland. In 2019, he became the Director of APC Microbiome Ireland. He is a Principal Investigator in the APC’s Microbes to Molecules Research Theme. His research interests mainly focus on antimicrobials and anti-infectives (applied and fundamental aspects); gut flora and gut health (how food programs—human health—including probiotics); bacteriophage (phage therapy and phage hardening); and human, animal and gut pathogens.
Catherine Stanton received her BSc in Nutrition/Food Chemistry from University College Cork in 1983, a MSc in Nutrition from the same university in 1986, a PhD in Biochemistry from Bournemouth University, UK in 1988, and a DSc from National University of Ireland in 2009. She is currently a Principal Research Officer at Teagasc and a Principal Investigator in the APC’s Microbial Metabolites Core and in the Food Health Ireland Research Centre. Her research interests mainly focus on nutritional aspects of dairy foods, and functional foods; probiotic cultures: health benefits, bioactive metabolite production and host health; infant gut microbiota: influence of dietary and environmental factors; probiotics: technological aspects, development of functional foods; bioactive lipids: microbial production of bioactive FA, CLAs, SCFA, n-3 FA, lipids and health benefits; and bioactive peptides.
