Dr. Isaac Duah Boateng is a Research Scientist at the Certified Group, San Antonio, TX, USA (a leading North American provider of laboratory testing, regulatory consulting, and certification and audit services that provides laboratory testing and regulatory consulting services in the food and
beverage, dietary supplements, cosmetics, and other industries). He obtained his B.Sc. in Nutrition and Food Science from the University of Ghana in 2012, his M.Sc. in Food Science and Engineering from Jiangsu University in 2021, and his Ph.D. in Food Science from the University
of Missouri in 2023. He joined the Certified Group in September 2023. His research interests include nutraceuticals, diet and diseases, food safety, natural product research, phytochemical analysis, bioproduct optimization, non-thermal processing of food, nutritional analysis, functional foods, etc. He has published more than 45 papers (35 of them as the first author) with an average impact factor of 6.5 and has over 580 citations and a h-index of 14 (Google Scholar, December 2023). Isaac is a reviewer for more than 60 journals and has reviewed over 220 manuscripts (index in Web of Science).
Yongkun Ma received his Bachelor’s degree in Food Processing from Shanghai Ocean University in 1986, his Master’s degree in Agricultural Products Processing and Storage from Northwest Agricultural University in 1999, and his Ph.D. in Agricultural Products Processing and Storage from China Agricultural University in 2005. Currently, he is a Professor at Jiangsu University. His research interests include: fermentation engineering in fruit wine, fruit vinegar and enzymes; extraction, analysis and evaluation of functional components of fruits and vegetables; probiotics fermentation engineering in the food industry; food flavor chemistry and its application; food high-pressure processing technology (HPP).
