Carlo Ignazio Giovanni Tuberoso is an associate professor in Food Chemistry at the University of Cagliari (Italy). He obtained his Master’s Degree in Pharmaceutical Chemistry and Technology at the University of Cagliari (Faculty of Pharmacy) and his Ph.D. in “Commodity Science of Food Products” at the University “La Sapienza” in Rome, and from 2002 to 2015, he was an assistant professor in Food Chemistry at the University of Cagliari. He teaches the “Dietary Products and Supplements” and “Food Chemistry” courses within the Pharmacy curriculum at the University of Cagliari. From 27/05/2004 to 2012, he was a member of the teaching staff committee of the Toxicology Ph.D. program, and from 07/04/2015, he has been a member of the teaching staff committee of the Ph.D. program in Life, Environmental, and Drug Sciences (University of Cagliari). He is a member of the Italian Chemical Society, the Italian Society of Food Chemistry (ITACHEMFOOD), and the Italian Pharmacist Association. He has been involved in several national and international research projects focused on food quality and nutritional, toxicological, and process innovation aspects. His research activity has been reported in numerous scientific publications, including 118 publications, corresponding to 4810 citations (h-index 36) (Scopus, 27 November 2023).
