Gianni Sagratini received his Ph.D. degree in Chemistry of Drugs from the Department of Chemical Sciences, School of Pharmacy, University of Camerino in 2003. He was an Invited Professor at the Department of Preventive Medicine and Toxicology, University of Valencia, in 2009–2010. He is now a Full Professor in the Scientific Disciplinary Sector Food Chemistry and Director of the School of Pharmaceutical Sciences and Health Products at the University of Camerino. His research fields lie in polyphenol, high-performance liquid chromatography, mass spectrometry, extraction (chemistry), antioxidant, food science, chromatography, botany, chemistry, and biochemistry.
Laura Alessandroni obtained her M.Sc. in Pharmaceutical Chemistry and Technology from the University of Camerino and in Pharmacy from the University of Valencia, and her Ph.D. in Pharmaceutical Nutraceutical and Food Science from the University of Camerino in March 2023. She is now a Food Chemistry Research Fellow at the School of Pharmaceutical Sciences and Health Products, University of Camerino. She specializes in Food Chemistry, Food Quality, Food Analysis, Food Science, and Technology.
