George I. Panoutsopoulos is an Associate Professor in Human Physiology at the University of Peloponnese and the Director of the Department of Nutritional Science and Dietetics. He obtained his B.Sc. and PhD degrees from the University of Bradford. He has published 79 scientific articles of original research in international peer-reviewed journals, accumulating over 1200 citations in total. He has published 15 scientific articles of original research in Greek peer-reviewed journals, and he has presented his research at more than 140 Greek and international conferences, where he has won 14 prizes.
Maria Dimitriou is an Assistant Professor at the University of Peloponnese. She obtained a Bachelor's degree in the Department of Nutrition & Dietetics from the Harokopio University of Athens, a Master‘s degree in Human Nutrition with a specialization in Clinical Nutrition from the University of Glasgow, and a Ph.D. degree in Nutrigenetics, Diet, and Genetic Susceptibility in Coronary Artery Disease from the Harokopio University of Athens. She previously worked as a Dietitian and Diabetes Educator at Roche Diagnostics and Research Associate at Harokopio University of Athens.
Aristea Gioxari is an Assistant Professor of Clinical Nutrition in the Department of Nutritional Science and Dietetics at the University of Peloponnese in Kalamata, Greece. She obtained her Ph.D. degree in the Department of Dietetics and Nutritional Science from Harokopio University. She previously worked as a Senior Researcher at Harokopio University (2012–2021), a Senior Researcher in the Marie Skłodowska-Curie (RISE) Program (2016–2018), and a Clinical Dietician at Geniko Nosokomeio Thessalonikes Gennemata, Thessaloniki, Greece (2018–2022). Her expertise is in investigating the effects of diet, mainly the Mediterranean diet (including its foods and food components), on health-related outcomes, with an emphasis on the clinical laboratory profile, inflammation, oxidative stress, metabolic indices, and biomarkers related to chronic disease.
