Author Biographies

Jaume Jordá has a degree in Veterinary Medicine and a Doctor in Veterinary Medicine from CEU Cardenal Herrera University (UCH-CEU) (Excellent cum laude). He teaches subjects in the Veterinary Medicine degree in relation to public health and legislation, and the Official Master's Degree in Food Safety at UCH-CEU. He holds a Certificate of Pedagogical Aptitude (CAP) and a Certificat de Capacitació per a Mestres in Valencia. His research experience focuses on the field of food safety and public health, and the history of veterinary sciences. He belongs to the research group “Improving food safety in the production system and its derived products: from farm to fork (CAMPYSALMO)”. He won the Juan Morcillo y Olalla Research Award from the Official College of Veterinarians of Valencia (ICOVV) (2014 and 2019), Recognition from the National Association of Veterinary History (2016), and the academic award CEU Angel Herrera 2021. In his university management work, he is the coordinator of the Official Master's Degree in Food Safety at UCH-CEU. He has been a member of the Ethics Commission and the Public Health Training Commission of the ICOVV, the Quality Assurance Commission and the Permanent Commission of the Faculty of Veterinary Medicine, and the President of the Valencian Association of Veterinary History (2016–2023).

Laura Montoro-Dasi is a veterinarian, who graduated from the CEU Cardenal Herrera University (UCH-CEU) in 2018, and a doctor from the Polytechnic University of Valencia (UPV) with the qualification of Cum Laude in 2021. Currently, she is a professor at the Department of Animal Production and Health, Veterinary Public Health and Food Science and Technology of the Faculty of Veterinary Medicine of UCH-CEU, teaching the subjects of biological agents of veterinary interest and management of poultry and rabbit farms. Her doctoral studies focused on the effect of improved animal welfare on the evolution of antimicrobial resistance and the spread of zoonotic pathogens, as well as the development of gut microbiota in broiler chickens. Furthermore, during her pre-doctoral training period, she worked at the Center for Quality and Animal Feeding of the Valencian Community (CECAV) as a veterinary technician within the European project Phagovet (H2020-EIC-FTI-2018-2020), whose objective was to develop a bacteriophage-based product for the control of Salmonella and Escherichia coli at the field level in laying poultry and meat production. Her main line of work focuses on the search for alternatives to the use of antibiotics in animal production, as well as studying their effect on intestinal health and the evolution of antimicrobial resistance.

Clara Marin graduated in Veterinary Sciences from CEU Cardenal Herrera University in Valencia, Spain, in 2004. Her research activities began in 2005, when she pursued her doctoral thesis at the Animal Technology Center of the Valencian Institute for Agricultural Research (CITA-IVIA). Her research focused on the epidemiology of Salmonella in broiler poultry farming. She successfully defended her doctoral thesis with EUROPEAN MENTION in 2009 at CEU Cardenal Herrera University, earning the distinction of "Cum Laude." Since 2014, she has been a European Diplomate of the European College of Poultry Veterinary Sciences (EBVS-European College of Poultry Veterinary Sciences) and served as the coordinator of the Educational Committee of the same European college from 2016 to 2021, when she became a member of the Executive Committee until 2023. In September 2023, she was appointed Vice President of the World Veterinary Poultry Association (WVPA). Currently, she holds the position of Professor in the Department of Animal Production and Health, Veterinary Public Health, and Food Science and Technology at the Faculty of Veterinary Medicine of CEU Cardenal Herrera University and is Head Researcher of the research group “Improvement of food safety in the production system and its derivative products: from farm to fork” (CAMPYSALMO) since 2010. She has been accredited as a full professor since November 2022.
