Eliana Fortes Gris received her Master's degree in Food Science from the Federal University of Santa Catarina in 2005 and her PhD in Food Science from the Federal University of Santa Catarina in 2010. Currently, she is an associate professor at the University of Brasília (UnB), Ceilândia Campus (FCE) and a lecturer in the Postgraduate Program in Health Sciences and Technologies (PPGCTS), FCE. She has experience in pharmacy, food science, and technology, and human health, with an emphasis on food science, working mainly on the following subjects: bioactive compounds, antioxidant activity, human health, phenolic compounds, chromatographic analysis, fruit, wine grapes, ripening, and wines.
