Vincenzina Fusco is senior researcher at the Institute of Sciences of Food Production of the National Research Council of Italy (CNR-ISPA). Her master’s degree cum laude in Food Science and Technology, her Italian Official License for the profession of Food Technologist and her PhD in Food Science and Technology were achieved at the University of Naples Federico II. Vincenzina Fusco is general secretary of the International Association for Monitoring and Quality Assurance in the Total Food Supply Chain (MoniQA Association) and reference person for CNR-ISPA at the European Food Safety Authority (EFSA) on the “biological hazards” thematic. Dr. Fusco’s main skills deal with food microbiology and molecular biology applied to food science and technology, with particular reference to (i) isolation, genetic, genomic and technological characterization and the employment of probiotic and technological bacteria for the production of (probiotic) fermented foods; (ii) the development and application of culture-dependent and -independent methods for the quali/quantitative detection of probiotic, technological, alterative and pathogenic foodborne bacteria; and (iii) the development and/or application of integrated microfluidic platforms for the quali/quantitative detection of pathogenic bacteria occurring in food. Such activities are documented in more than 100 publications.
