Special Issue Information

Dear Colleagues,

In recent years, natural coatings have become the focus of scientists. Natural substances such as plant extracts, bacterial metabolites or even bacteria themselves are less invasive alternatives to chemicals related to the protection and preservation of food and maintaining its safety. Natural substances are usually safe for contact with food, and they can increase the nutritional value of food products as well as affect organoleptic properties. In addition, thin bacterial films (biofilms), depending on species composition, may have pathogen antagonistic properties and, thus, determine microbiological food safety or affect the functionality of food when (bio)coatings are formed by probiotic or potentially probiotic bacteria. Based on current knowledge, it is interesting to use natural coatings and thin (bio)films for food preservation and protection, as well as in the production of packaging. Therefore, this Special Issue will serve as a presentation platform for articles with the following specifications:

  • New insight (knowledge, ideas and experimental studies) into natural coatings in food technology;
  • Recent discovery of natural substances (e.g., essential oils) in shaping microbiological food safety;
  • The latest reports on potential biological coatings and films in the production of packaging;
  • Current research on the role of natural coatings in increasing the nutritional value of food products;
  • The current status of coatings and biofilms as functional food components.
